Ingredients
Masala Powder
- 1½ tbsp Coriander seeds
- 3 Nos. Dried Red Chillies
- ½ teaspoon Fennel seeds
- 2 Nos. Green Cardamom
Onion Tomato Paste
- 1 tbsp Oil
- ¾ inch Ginger (chopped)
- 3 Nos Garlic Cloves (chopped)
- ½ cup Onions (cubed)
- ½ cup Tomatoes (chopped)
- ½ teaspoon Salt
- 6 Nos Cashew Nuts
Sautéing Mushrooms
- 1 tbsp Oil
- 200 gms Chopped Mushrooms
- ½ cup Onions (cubed)
- ½ cup Capsicum (Green Peppers) cubed
- 2 Nos Green Chillies (Slit vertically)
Gravy
- 1 tbsp Oil
- 1 teaspoon Kashmiri Red Chilli powder
- ¾ teaspoon Garam Masala powder
- ¾ cup Water
- ¾ teaspoon Salt (adjust as per taste)
- ¾ teaspoon Kasuri Methi (dried fenugreek leaves)
Instructions
Masala Powder
- Heat a pan on the stove and dry roast 1½ tbsp of Coriander seeds + 3 Nos. dried red chillies + ½ teaspoon Fennel seeds + 2 Nos green cardamoms.
- Let them cool and grind them to a powder in the blender. Keep this powder aside.
Onion Tomato Paste
- Heat 1 tbsp of Oil in a Pan.
- Add the chopped Ginger and Garlic and sauté for ½ a minute. Do not let the Garlic burn though.
- Add ½ cup cubed onions and saute until the onions are glazy and pink.
- Add ½ cup of chopped tomatoes and ½ teaspoon of salt and sauté until the tomatoes are mushy.
- Add 6 Nos. Cashew nuts and toss everything for a few seconds and turn off the stove.
- Let it cool and grind to a smooth paste in a blender. Keep the paste aside.
Sautéing Mushrooms
- Clean and rinse 200gm of Mushrooms well and slice them into bite sized pieces.
- Heat 1 tbsp of Oil in a Pan (or Kadai)
- Add the Mushrooms and sauté for 3 mins.
- Add the cut Onions and Capsicum and sauté everything for another 2-3 minutes or until the Mushrooms turn slightly golden.
- Turn off the stove and keep this aside.
Cooking the Kadai Mushroom
- Heat 1 tbsp of oil in a Kadai (Frying Pan)
- Add the Masala powder kept aside and sauté the powder for 2 minutes.
- Add the Onion/Tomato paste kept aside and mix well.
- Add 1 teaspoon of Kashimir Red Chilli powder and ¾ teaspoon of Garam Masala powder and mix everything well.
- Sauté everything for 3-5 minutes.
- Add ¾ cup of Water and mix into a gravy. You can add more water as per the consistency desired.
- Cover the Pan and cook for 3 minutes on a medium flame. The oil should float on top.
- Check the salt and add more if required as per taste.
- Add ¾ teaspoon of Kasuri Methi and the sautéd Mushrooms + Capsicum + Onions into the gravy and stir well.
- Cover and cook on a low flame for 2-3 minutes.
- Turn off the stove and garnish with chopped Coriander leaves if desired.
- Serve hot with Rotis or Butter Nans
Notes
Serve with sliced Onion rings and lemon rind.
